What are you going to do?
In your thesis / graduation assignment, you will investigate if the addition of chicory root fiber influences the forming of acrylamide in different food products. Chicory root fiber is often used as sugar and/or fat replacer in several food applications including bakery products. The assignment will consist of; a literature study, study of former tests with the chicory root ingredients, investigation of the currents laws and regulations in this area. Preparation of samples; i.e. cake, muffins, biscuits, and possibly part of the pre-preparation of these samples for acrylamide analysis. All the information and results will be summarized in a report including conclusions and recommendations.
The ultimate goal of your graduation assignment, is to define if the replacement of sugars by chicory root fiber, in for example a cake, is affecting the forming of acrylamide in the final product.

Who are you
You are a 4th year university / university of applied sciences student, with affinity for and proven experience with food ingredients and their use and functionality in food (bakery) products. You are studying Food Technology, Food & Health or similar. Furthermore we ask:
  • A pro-active, independent attitude and drive;
  • Experience with literature research
  • Experience in bakery (theoretical and preferable also practical)
  • Experience and knowledge of the use of food ingredients in bakery application and other food applications
  • Fluency in spoken and written English and/or Dutch
  • Knowledge of- and experience with MS Office (Word, Excel and Powerpoint)
Where are you going to work?
Cosun R&D is the knowledge and expertise center of Cosun, situated in the Cosun innovation center in Dinteloord. Cosun R&D provides services to the Cosun business groups and their customers by sharing its know-how and experience in a wide ranges of (R&D) competences. With this knowledge, our colleagues at Cosun R&D help coordinate and initiate research and development Cosun wide. Additionally, Cosun R&D works together with the business groups to develop new and innovative applications of biomass. Our Cosun innovation center facilitates in experimental set ups for process analyses, research laboratories, a pilot plant and our very own bakery, for testing new concepts. You can count on a challenging assignment and personal attention and guidance.

During your internship you will be located at our Cosun innovation center in Dinteloord.
